Ingredients to make gourmet Monkfish:

- 4 potatoes
- 75 gr. of almonds

- 1 glass of milk
- Fish brother made with the head of the monkfish and some horse mackerel

How to make gourmet Monkfish:
- In boiling water cook the four potatoes, previously turned. Cut the monkfish and pass it through flour.
- Fillet the garlic and peel the fresh prawns.
- In a clay pot, fry the garlic and the prawns almost simultaneously, giving the prawns a little more time.
- Then fry the fresh monkfish on both sides.
- Once it has been fried, add the best quality white wine, this is important. If the wine is bad, the quality of the dish suffers, mix with a little flour and add the milk.
- Let it boil gently and cover with the fish brother that we will have prepared beforehand.
- Let it cook for ten minutes and then add the parsley, the boiled potato and the almonds.
- Cut the bell pepper into strips.
- Let boil for two to three minutes.
- Remove from the heat and decorate with the bell pepper strips.
- Add four tablespoons of Alioli and bake in a strong oven for three or four minutes.
- At this point, it is delicious to eat.
- Alioli is like a mayonnaise made with crushed garlic in a mortar with a little salt.
- When a paste is made, add the oil little by little, stirring continuously to emulsify the oil.
- In the absence of this preparation, with worse flavor results, you can make a mayonnaise with a lot of garlic and use it as if it were Alioli.
