Gourmet Chicken and Mushroom Salad Recipe

Ingredients to make Gourmet Chicken and Mushroom Salad:

• 1 bag of tender shoots

• 4 oyster mushrooms

• 5 cherry tomatoes

• 1 chicken breast

• 3 slices of black truffle

• 1 splash of rosemary oil

• 1 pinch of salt

How to make Gourmet Chicken and Mushroom Salad:

Cut 3 or 4 slices of the truffle with a sharp knife, set aside.

The truffle is considered a delicacy and is the fruit of an underground fungus. The black truffle is one of its varieties and is also known as the winter truffle. The truffle is a food that adds aroma and flavor to dishes.

Tip: The truffle does not have to be fresh of the day, you can have it frozen and cut or grate the pieces you need.

On the other hand, cut the breast into more or less equal pieces. I like something chubby, but you can make them any size you want, in cubes or strips.

Heat a frying pan with 3 or 4 tablespoons of the rosemary oil and when it is hot, add the truffle flakes and give them a few turns, shaking the pan so that they are impregnated with the aroma of the truffle. After a few minutes, add the chicken pieces, season and fry until done.

While the chicken is frying, cut the oyster mushrooms into two pieces and the tomatoes in half. He takes the chicken out of the pan and puts it back on the heat with a few drops of oil.

When hot, sauté the mushrooms until they turn brown and are al dente. Do the same with the halves of the tomatoes and add a little salt.

To plate the salad and have a gourmet dish, start by placing the tender shoots in the center of the plate, season with a little salt.

Top with the chicken pieces, the roasted tomatoes and the truffle slices. Arrange the pieces of sautéed mushrooms all around, and drizzle with a good jet of rosemary oil.

If the gourmet chicken and mushroom salad is dressed with rosemary oil, nothing else is needed, but if you don’t have it, I advise you to do it with a good virgin olive oil.
