Golden Potato Tacos with Chicken Recipe

One of the most popular appetizers in Mexico are the delicious golden tacos and the incredible thing about these is that there are many styles and combinations, all of them equally delicious.

They are one of the few dishes that can be prepared practically with what we have in the refrigerator since we can transform any ingredient into the main ingredient of this dish, making it a very practical, versatile and easy dish to prepare.

It is for all this that this time we bring you some super simple but exquisite golden potato tacos with chicken, which will delight children and adults alike, and will also make the chicken meat yield for many Mexican tacos.

Ingredients to make Golden Chicken Potato Tacos:

  • 16 pieces of thin corn tortilla
  • 3 pieces of potato
  • ½ piece of chicken breast
  • ½ piece of Onion
  • 1 clove garlic
  • 1 bunch of fresh cilantro
  • ½ cup of oil
  • 1 pinch of salt
  • 1 pinch of pepper

How to make Golden Chicken Potato Tacos:

In the following image you can see the ingredients that we will need to prepare these delicious golden potato tacos with chicken. We are going to place the chicken in a saucepan with enough water, add a clove of garlic, a piece of onion and a little salt and let it cook. In another saucepan with enough water, place the potatoes, perfectly clean, put them over high heat and let them cook perfectly well until they are soft when introduced with a fork. On the other hand, we take the coriander and rinse it under running water. Later we place it in a deep container with enough water and leave it disinfecting with your preferred disinfectant for vegetables. Once between 3 and 5 minutes have passed, we drain the water, chop and reserve it. Meanwhile we take the remaining onion and begin to chop it finely, as we can see in the following image. Once ready, we reserve it for a moment. Once the chicken for the Mexican tacos is ready, we remove it from the hot water, let it cool for a moment, and once it is cold, we begin to shred it, and reserve it for a moment.

Once the potatoes are extremely soft, we remove them from the water, peel them under cold running water, place them in a deep bowl and with the help of a masher, and begin to puree them, as we see in the image. Now we add the shredded chicken to the mashed potatoes and integrate everything perfectly so that these ingredients are well incorporated. Once the potato and the chicken are united, we take the chopped onion and the disinfected and chopped coriander, add them to the mixture of the golden tamales and integrate perfectly, add a pinch of salt and a pinch of pepper. Now we form the fried potato and chicken tacos: we take the tortillas and place a little of the potato and chicken mixture inside them, then we begin to roll the tortilla to form the taco.

This is how we form all the potato tacos until we finish with our potato and chicken mixture. Once ready, we take the Mexican tacos and place them in a frying pan with plenty of previously heated oil, and let them brown until they are crispy, taking care not to burn them. Once the golden potato and chicken tacos are crispy, remove them from the oil, place them on absorbent paper to remove excess fat and they are finally READY!

You can accompany them with a little sour cream, grated cheese, lettuce and the sauce of your choice because they are delicious.
