Gnocchi Stuffed with Gorgonzola Recipe

If you like intense flavors, the gnocchi stuffed with gorgonzola is a dish that you cannot stop trying. Gorgonzola cheese is a type of blue cheese widely used in Italian cuisine and this time we will use it to flavor some wonderful homemade gnocchi.

  1. 350 grams of potatoes
  2. 100 grams of flour
  3. 25 grams of Parmesan cheese
  4. 1 pinch of Nutmeg
  5. 1 teaspoon salt
  6. 60 grams of Gorgonzola cheese

How to make gnocchi stuffed with gorgonzola:

  • To make homemade gnocchi we will need a mashed potato, so the first thing to do is to boil the potatoes in water with a pinch of salt until they are soft enough. Then drain, crush and reserve until the mixture cools to room temperature.
  • After this time, we combine the Parmesan cheese with the flour, nutmeg and salt. Remember that to make this mixture the cheese must be grated or powdered.
  • Then we add this to the mashed potatoes that we made in the first step and knead until we get slightly moist dough that does not stick to our hands.
  • To form the gnocchi, we will continue as if it were the traditional recipe, so now it is time to form two elongated cylinders that will allow us to cut pieces of dough of approximately 3 centimeters.
  • But since it’s about stuffed gnocchi and not normal gnocchi, now it’s time to make a paste with the gorgonzola cheese, to do this, crush the cheese with a fork.
  • Then, form balls with each piece of dough, flatten it and place a portion of cheese in the center. Close the gnocchi and shape it by pressing with a fork. Repeat the process until you finish all the dough.
  • To cook the stuffed gnocchi, we must divide them into two portions, unless you have a very large pot available, and place them in boiling salted water. Keep a close eye on cooking because it should not exceed three minutes, you will see how the gnocchi begin to float and then you must remove them with a slotted spoon.
  • Gorgonzola- filled gnocchihas a slightly strong flavor, so any simple sauce works well. I recommend you to sauté them with a little basil and butter or prepare a mushroom sauce without cream or wonderful lettuce pesto … enjoy it!
