  • 1 ripe Hass avocado
  • 1 handful of Basil
  • 1 clove garlic
  • 50 grams of ground almonds, pine nuts or walnuts
  • ½ Lemon for juice
  • 2 tablespoons of olive oil
  • 1 pinch of salt and black pepper
  • 500 grams of Gnocchi or Gnocchi’s
  • 100 grams of cherry tomato
  • 1 handful of Parmesan cheese shavings (optional)

How to make Avocado Pesto Gnocchi:

  1. The first step for this gnocchi recipe will be to make the avocado pesto sauce.
  2. Then, place the avocado pulp in a blender.
  3. Reserve a little basil for the garnish and put the rest in the blender with the garlic, walnuts, lemon juice and olive oil.
  4. Beat it for 20 seconds until smooth.
  5. Season with salt and black pepper and correct the seasoning if necessary by adding more of any of the above ingredients.
  6. Cook the gnocchiin a pot with boiling water until tender.
  7. Drain well and add the pesto sauce and tomatoes. Heat it and stir it for 1-2 minutes.
  8. Serve on plates, season the pasta and add the basil garnish and Parmesan cheese shavings.
