Gnocchi a la Norma recipe

Asta alla Norma is part of Sicilian cuisine, specifically it comes from the city of Catania. In Italy it is usually prepared with ricotta cheese that we have replaced with Spanish cottage cheese. In addition, we have combined this Italian recipe with some gnocchi or potato balls. We hope you enjoy these excellent gnocchi a la Norma that we present to you.

Ingredients to make Gnocchi a la Norma:

  • 1 unit of Eggplant
  • 4 tablespoons of cottage cheese
  • 300 grams of crushed tomato
  • 1 handful of fresh oregano
  • 1 clove garlic
  • 1 pinch of salt
  • 1 pinch of sugar
  • 600 grams of Gnocchi
  • 1 pinch of ground black pepper
  • 200 milliliters of olive oil

How to make Gnocchi a la Norma:

  1. We gather all the ingredients to make the gnocchi a la Norma.
  2. Sauté the garlicin 2 tablespoons of olive oil. We brown it without burning it.
  3. Then add the grated tomato,a little salt and a little ground black pepper. If the tomato is very acid we add white sugar.
  4. After 10 minutes, add the fresh oregano and cook another 5 minutes over low heat.
  5. The oregano can be substituted for fresh basil.
  6. On the other hand, we fry the aboriginesin abundant boiling oil.
  7. Previously we have cut the aborigines into squares and we have added a little salt.
  8. Drain the aborigines on a plate lined with absorbent paper.
  9. Cook the gnocchi in abundantboiling water with salt.
  10. Normally the cooking time is 1 minute, until the gnocchi begin to rise to the surface.
  11. We drain them and reserve.
  12. We serve these delicious gnocchi a la Normawith a little tomato sauce, the aborigines and a spoonful of cottage cheese per plate.
