Ingredients to make Gingerbread Candies:

  • 250 grams of sugar (1¼ cups)
  • 40 grams of grated ginger
  • 100 milliliters of lemon juice
  • 1 tablespoon butter or margarine

How to make Gingerbread Candies:

  1. To get started with these easy ginger candies, remove the skin from the ginger. The easiest way to do this is by scraping with a teaspoon. Then grate it and it’s up to you to decide whether to grate on the coarse side, the fine side, or a combination of both. We did it for the thickness because that’s how the ginger bits feel
  2. Squeeze the lemons until you get about 100 ml. We use three lemons.
  3. In a saucepan, combine the sugar, grated ginger, and lemon juice. Mix very well until all the ingredients are
  4. It is time to take it to the fire with medium-high heat, let it boil without stirring.
  5. The idea is to bring the mixture to the point of caramel. This is reached 10 minutes from the moment it boils.
  6. While the time passes, grease the surface where you will pour the melted caramel well. Distributes butter or margarine very well.
  7. To find out if the caramel is ready, pour a tablespoon of the mixture into a little water at room temperature.
  8. Then, with the tips of your fingers, manipulate until you form a ball. When you get it to form, it’s already at the right point.
  9. Now, pour the caramel in several portions on the surface that you greased.
  10. The caramel cools down pretty quickly. When it reaches a temperature that you can handle, fold the strips in thirds, and then stretch them out with your hands to form candy strings.
  11. Let it cool and harden for another 20 minutes and cut them with scissors.
  12. Another way to make the caramels is to grease a silicone mold and pour the caramel directly into it. In any case, let it cool completely for a few hours.
