Part of my husband’s family lives in Germany, so this German potato salad with mayonnaise was often made at home. I made the recipe my own and almost every month at home we enjoy a German potato and pickle salad in the purest Coca style.
The German potato salad can be eaten warm or cold, either way it is very tasty, but freshly made it is wonderful.
I share my version that I hope you will be encouraged to prepare at home, I am sure you will like it!
Ingredients to make German Potato Salad with Mayonnaise:
• 1 kilogram of potatoes
• 1 can of Buckhurst Sausages (250-350 grams of sausages depending on the brand)
• 1 jar of pickled cucumbers (about 180 grams)
• 1 teaspoon Old Dijon Mustard
• 100 grams of Mayonnaise
• 1 pinch of ground black pepper
• 1 pinch of ground garlic
How to make German Potato Salad with Mayonnaise:
Firstly, to make this German potato salad with mayonnaise, we peel the potatoes, cut them into small pieces and cook them in a pot with plenty of water. When they are cooked, drain them and reserve.
Tip: You can also cook whole potatoes but they will take longer to cook, which results in more light consumption.
While the potatoes are cooking, drain the sausages and cut them into more or less large pieces (as you can see in the photo), put them in a frying pan and lightly sauté them.
We can also make a German potato salad with frankfurter if we substitute these sausages for the others.
Trick: This step is not essential, you can put the sausages as they come in the pot because they are already cooked, but it gives a very tasty touch to the German potato and pickle salad.
Put the sausages in a large bowl, add the pickles cut into pieces and the potatoes as soon as they are cooked and drained.
Trick: Don’t throw away all the vinegar from the pickles that we will need later on!
Dress the easy German salad with a generous tablespoon of Dijon mustard, a little ground pepper and garlic, two tablespoons of the pickle vinegar and mayonnaise. We mix well and now we can enjoy this German potato salad with mayonnaise!
Trick: German potato salad with pickles must be dressed with hot potatoes because it acquires a very good texture. Do not go overboard with the mayonnaise, we want to add a touch, not bathe the ingredients.
