Genovese Noodles Recipe

Ingredients to make Genovese Noodles:

  • 1 kilo of noodles (neither thick nor thin)
  • 10 Italian or round tomatoes, peeled and blended
  • 1 can of tomato paste
  • 2 blended red onions
  • 4 minced garlic cloves
  • 2 medium whole cinnamon sticks
  • 6 pieces of mushrooms cut
  • 3 medium bay leaves
  • 4 clove sticks
  • 1 medium glass of red wine
  • 4 teaspoons of ground yellow chili
  • 4 teaspoons of white sugar
  • 4 teaspoons of cornstarch

How to make Genovese Noodles:

  1. Boil the noodles, with little oil.
  2. In a frying pan, pour vegetable oil, heat, add the garlic, onion, after it boils, add the blended tomatoes.
  3. After forming a cream, add the tomato paste, the wine, the mushrooms, the cloves, and the whole cinnamon.
  4. When it thickens, add the ground chili pepper and sugar and finally add the cornstarch dissolved in 1/2 cup of water.
  5. Cover halfway, let simmer for 15 minutes.
  6. After serving, place 3 small pieces of butter on each plate and Parmesan cheese to taste.
  7. Served with garlic bread with oregano.
