There are many versions of gazpacho, and we present the “recipe without”: gazpacho without bread, without garlic and without onion. It will surely be the lightest and healthiest tomato soup you can try. It is an easy and fast gazpacho, and very tasty! What more could you want?
Ingredients to make Gazpacho without bread:
- 7 units of ripe tomato
- 1 unit of green pepper
- ½ unit of Cucumber
- 1 pinch of salt
- 3 tablespoons of extra virgin olive oil
- 3 tablespoons of white wine vinegar
How to make Gazpacho without bread:
- To prepare this light gazpacho we choose very ripe tomatoes, as well as a green pepper and half a cucumber. In this version we eliminate the traditional garlic and onion, as well as the bread that is usually added to the traditional Andalusia gazpacho. Extra virgin olive oil and white wine vinegar are essential for a delicious gazpacho without bread.
- Wash and chop the tomatoes; you can scald them to peel them, but you don’t have to. We also wash and chop the cucumber, and the same with the green pepper, from which we try to remove the seeds. We put everything in the glass of the blender to chop it.
- Then add salt, three tablespoons of extra virgin olive oil and three of white wine vinegar, and blend again. If you prefer, you can pass the gazpacho through a Chinese strainer, but you can also opt for a thicker and more flavorful texture.
- Pour the gazpacho without bread into glasses or bowls and decorate them with a slice of cucumber. It is advisable to leave it in the fridge half an hour before serving. If you prefer a more traditional recipe you can try this original gazpacho.
