Garlic soup with clams recipe

Ingredients to make Garlic Soup with Clams:

  • 3 tablespoons olive oil
  • 150g onion
  • 300 g of celery
  • 1 head of garlic, unpeeled
  • 3 cups of dry bread
  • 1 teaspoon sweet paprika
  • 2 liters of fish broth
  • 400 g of clams
  • a bit of parsley
  • Salt

How to make Garlic Clam Soup:

  1. Steam open the clams and reserve their juice on one side and their meat on the other.
  2. Finely chop (in brunoised) the onion, the celery and together with the unpeeled head of garlic, fry for 5 minutes or until the onion is transparent.
  3. Add the dry bread, a teaspoon of sweet paprika, fish broth and a cup of liquid from the clams.
  4. Let simmer, covered, for 15 minutes. Season with salt to taste.
  5. Ten minutes before serving, bring the soup to a boil and add the clams.
  6. When it boils again, add the chopped parsley. We serve immediately.
