Ingredients to make Garlic Soup with Clams:
- 3 tablespoons olive oil
- 150g onion
- 300 g of celery
- 1 head of garlic, unpeeled
- 3 cups of dry bread
- 1 teaspoon sweet paprika
- 2 liters of fish broth
- 400 g of clams
- a bit of parsley
- Salt
How to make Garlic Clam Soup:
- Steam open the clams and reserve their juice on one side and their meat on the other.
- Finely chop (in brunoised) the onion, the celery and together with the unpeeled head of garlic, fry for 5 minutes or until the onion is transparent.
- Add the dry bread, a teaspoon of sweet paprika, fish broth and a cup of liquid from the clams.
- Let simmer, covered, for 15 minutes. Season with salt to taste.
- Ten minutes before serving, bring the soup to a boil and add the clams.
- When it boils again, add the chopped parsley. We serve immediately.
