Ingredients to make Garlic Clams:
- 300 grams of fresh Clams in their shell (they must be closed)
- 1 tablespoon butter
- 2 garlic cloves
- 1 pinch of salt
- ½ glass of white wine
- 1 pinch of ground black pepper
- 2 sprigs of cilantro or fresh parsley
- 1 parsley leaf
How to make Garlic Clams:
- We will begin to prepare these garlic clams by washing them several times with a lot of water to remove all the sand.
- Next, we put them in a pot with a bit of water and a bay leaf so that the steamed clams open as soon as they start to boil. Once open, we separate those that are still closed (because those will not be good), strain the juice that has been released from cooking through a fine strainer and reserve it for later.
- Next, we put a non-stick frying pan on the fire and melt the butter. Then we peel and chop the garlic, add them and start to brown
- Now we add the steamed clams with their shells and everything and stir well to integrate all the flavors. When they are beginning to dry out, add the cooking juice to deglaze the pan and also the white wine.
- Cook the clams with garlic for a few more minutes so that the alcohol evaporates and the sauce thickens a bit, and we also sprinkle a pinch of salt and pepper to taste and stir well.
- Finally, we chop the coriander or fresh parsley, sprinkle it on top, mix the clams with garlic well with white wine and place them in the dish or dish that we want.
