Garganelli recipe with pepper with zucchini

Ingredients to make Garganelli with pepper with zucchini:

  • For 4 people:
  • 250 g Garganelli all’uovo – 115
  • 300g zucchini
  • 1 clove garlic
  • salted
  • 1 onion
  • 1 bouquet of weld ribs
  • 1 tablespoon of pink pepper
  • 3-4 mint leaves

How to make Pepper Garganelli with Zucchini:

  1. Cut the courgettes, wash them, dry them and cut them into thin strips.
  2. Wash the weld ribs, set aside 2 florets and chop the remainder; wash the mint leaves and dry them with a cloth.
  3. Peel the onion and garlic, wash them and chop them finely; place in a pan with the oil and sauté.
  4. Add the zucchini, braised ribs, mint leaves, pink peppercorns, a pinch of salt and pepper and sauté for 5-6 minutes.
  5. Meanwhile cook the pasta in boiling salted water; Strain it al dente, season it with the sauce and sprinkle it with the chopped welded ribs.
  6. Serve immediately.
