Garden paella recipe

Ingredients to make Paella from the garden:

  • 200 grams of rice
  • 100 grams of mushrooms
  • 1 zucchini
  • 1 onion
  • 8 pods
  • 1 green pepper
  • 1 red bell pepper
  • 100 grams of pumpkin
  • 100 grams of small tomatoes
  • 1 clove garlic
  • 1 liter of vegetable broth or water
  • 2 tablespoons of olive oil
  • Salt

How to make Paella from the garden:

  1. We make the refried vegetables for the rice by cutting the zucchini and pumpkin into cubes, the onion into squares and the peppers into squares, previously removing the seeds.
  2. Heat the oil in a saucepan and fry the onion over low heat for about 5 minutes.
  3. Add the zucchini, the pumpkin, the peppers, the pods cut into strips and the mushrooms cut into quarters and cook over low heat until they begin to turn golden. Season with salt.
  4. Add the rice and the chopped tomatoes and let it sauté with the vegetables.
  5. Cover with the vegetable broth or with water and let it cook over low heat for 18 minutes.
  6. Remove the casserole from the heat and let it rest for 5 minutes uncovered.
  7. We serve hot.
