Galician style clams recipe

Ingredients to make Galician clams:

  • 1 kilo of clams
  • 2 medium onions
  • 1/2 red pepper
  • 3 garlic cloves
  • 2 tablespoons of fried tomato
  • Oil
  • 1 bay leaf
  • 1 small glass of white wine (albariño)
  • Salt
  • White pepper
  • 2 tablespoons breadcrumbs
  • 1 envelope of saffron
  • Parsley

How to make Galician clams:

  1. In a pot with a little oil, brown the garlic, onion and pepper, all cut very fine.
  2. Add the parsley and bay leaf.
  3. When the washed clams are added, stir a bit and add the fried tomato, the saffron envelope, the white wine and the breadcrumbs.
  4. Season with salt and pepper and cook for 10 minutes.
