Galician Burnt

Ingredients to make Galician Queimada:

  1. 1 liter of brandy
  2. 175 grams of sugar
  3. 1 lemon
  4. 1 orange
  5. 1 handful of coffee beans

How to make Galician Queimada:

  • To prepare the Galician queimada, you must use a suitable container, the ideal is a special pot for queimada that usually has legs, but if you don’t have one, you can use a common clay pot. Put the liter of brandy and sugar in the casserole.
  • Wash the orange and lemon well, dry them and peel the skin with a vegetable peeler. Add that skin to the brandy with the sugar. If you don’t have a peeler, you can cut the skin with a very sharp knife.
  • Finally, add a handful of coffee beans.
  • Trick: in other preparations, other fruits such as apples are also usually added.
  • Now, it is time to burn the Galician queimada. This is an important step, try to do it in a large place so that only the alcohol ignites. To light it, the ideal is to use a long kitchen burner or a kitchen torch. Light the flame by carefully bringing it closer to the pot, as soon as the alcohol ignites, remove the flame.
  • With a kitchen ladle, go around slightly without reaching the bottom. The more you get to the bottom or the harder you stir, the more flames will form, so be careful. At this moment, while turning around with the ladle, is when the incantation for the Galician queimada is read?
  • The more you burn the alcohol, the less strong it will be and it will take on a more golden color. That already depends on tastes, if you like it very strong, as soon as you read the spell, you can stop stirring. To put out the burn, put a lid on top of the casserole.
