Galician broth recipe with potatoes

Ingredients to make Galician broth with potatoes:

  • 1 bunch of turnip greens
  • 1/4 kilo of white beans
  • 1 piece of oil or bacon or lard
  • 1 sausage of the year
  • 3 Galician potatoes
  • Salt

How to make Galician broth with potatoes:

  1. Leave the beans to soak for 12 hours. Fill a pot with two liters of water and cook it with the oil and the chorizo; when it starts to boil, skim until the broth is clear. Drain the beans and add them to the broth; when it comes to a boil again, lower the heat so that it cooks continuously but slowly, with soft bubbles, skimming again if necessary. Peel the potatoes, divide them in two and add them to the broth; wash the turnip tops by removing the thick stem and chop it, cut it medium-sized and add it to the pot, letting it cook slowly, until everything is tender, and the potato is undone, the slower it cooks, the better the result. Serve in clay bowls to keep the broth very hot.
