Ingredients to make Fruit Soup:
- 1 cup of red mango papaya pulp
- 1/2 cup heavy cream or skim milk or yogurt
- 6 tablespoons fruit liqueur (to taste)
- 24 cherries, washed, with stems
- 24 lychees or plums, yellow washed
How to make Fruit Soup:
- Peel and de-bone the lychees or plums over a bowl to recover the juices.
- The papaya, mango pulp is liquefied with the cream, or milk or yogurt, sweetened with the fruit liqueur and the juice released by the fruits when peeled is added.
- If cherries are used, the stone is removed; if it is made with strawberries they can be put whole or cut in flower.
- Put 4 tablespoons of sauce in the deep plate and place the fruits on top, alternating. It is served cold.
- Variation: The sauce is made with 1 cup of black sapote pulp, 1/2 cup of tangerine or orange juice and 6 tablespoons of fruit liqueur.
- As fruit, to complete the dish, we suggest plums with red skin, unpeeled and in slices or mango slices.
