Ingredients to make Fruit Soup:

  • 1 cup of red mango papaya pulp
  • 1/2 cup heavy cream or skim milk or yogurt
  • 6 tablespoons fruit liqueur (to taste)
  • 24 cherries, washed, with stems
  • 24 lychees or plums, yellow washed

How to make Fruit Soup:

  1. Peel and de-bone the lychees or plums over a bowl to recover the juices.
  2. The papaya, mango pulp is liquefied with the cream, or milk or yogurt, sweetened with the fruit liqueur and the juice released by the fruits when peeled is added.
  3. If cherries are used, the stone is removed; if it is made with strawberries they can be put whole or cut in flower.
  4. Put 4 tablespoons of sauce in the deep plate and place the fruits on top, alternating. It is served cold.
  5. Variation: The sauce is made with 1 cup of black sapote pulp, 1/2 cup of tangerine or orange juice and 6 tablespoons of fruit liqueur.
  6. As fruit, to complete the dish, we suggest plums with red skin, unpeeled and in slices or mango slices.
  7. With our fruits and a little imagination, wonders can be done.
