Frijoles Recipe

Ingredients to make Frijoles:

  • 3 cups frisolescargamanto (red) or pink
  • 15 cups of water
  • 1 pound of pork hoof
  • 2 green bananas, peeled and finely chopped with a fingernail
  • 1 grated carrot
  • 1 cup of Hogan, blended or ground
  • 2 tablespoons of oil
  • Salt
  • pepper and cumin to taste
  • Ingredients Hogan
  • 2 pounds of tomato dressing chopped
  • 6 chopped onion stalks
  • 4 tablespoons of oil
  • Salt
  • pepper and saffron to taste

How to make Fries:

1 The beans are washed and soaked in cold water overnight. In the same water they are cooked for 3 hours with the claw (if desired) -pork skin-, the carrot, the bananas and the Hogan. When they are soft, add the oil, salt and cumin and leave to keep until the desired thickness is achieved.

2 They are served with areas, pat cones (mashed and fried green plantain), pork rinds (pork skin), white rice, ripe plantain, fried egg, chorizo, ground beef, avocado, salad and a Hogan pot for each diner.

3 Hogan Preparation: Sauté the tomatoes and onions in the oil, stirring until a smooth sauce is achieved.

4 Add salt, pepper and color.

5 It can be kept in a glass jar in the refrigerator.

6 Try not to eat it late at night because it can be heavy, but that is if you don’t stop enjoying it, which is the best typical dish in Colombia.
