Fried Vegetable Salad Recipe

Ingredients to make Fried Vegetable Salad:

• 100 grams mushrooms

• 300 grams spring onions

• 250 grams egg plant

• Olive oil

• 200 grams carrots

• Salt

• 300 grams leeks

• 200 grams artichokes

• Flour (special)

For the vinaigrette sauce:

• 2 cups of virgin olive oil

• 150 grams spring onion

• 1 teaspoon chopped parsley

• Salt

• 1/2 glass of vinegar

• 2 cloves of minced garlic

How to make Fried Vegetable Salad:

Prepare the vinaigrette by chopping the spring onion, garlic and parsley. We mix it in a sauceboat with the oil, vinegar and salt, previously beaten. Clean the mushrooms cut them in half and fry them in very hot oil. We do the same with the leeks and peppers, cut into strips. Cut the aborigine into slices, season them, pass them through flour and fry. Cut the spring onions into rings, pass it through flour and fry. Cut the carrots, artichokes and red peppers very thinly and fry them together. We drain all the vegetables. We assemble the dish and accompany it with the vinaigrette sauce served separately.
