Fried Scallops Recipe

Ingredients to make Fried Scallops:

  • 8 scallops
  • Salt
  • White pepper
  • 1 egg
  • Bread crumbs
  • Parsley
  • 200 grams of butter or oil

How to make Fried Scallops:

  1. Open the scallops (if they are fresh they must be tightly closed), inserting the point of the knife into the muscle of the seam.
  2. Clean them, cutting the white muscle and the orange end into a single piece and removing the entrails (they are dark in color).
  3. Leave them in salted water for a few minutes.
  4. Drain them, dry them and blanch them for five minutes in a pan with white wine
  5. Give a touch of freshly ground pepper and another of salt. Drain them again, dry them.
  6. Coat them in beaten egg and breadcrumbs and fry them for 2 or 3 minutes on each side and remove when they are golden.
  7. Drain the oil, leaving them for a few seconds on a cellulose cloth.
  8. Serve accompanying them with warm hollandaise sauce.
  9. For 4 people
