Fried Salty Fritters Recipe

Ingredients to make Fried Salty Fritters:

  • 3 eggs
  • 120 milliliters of coconut milk
  • 100 grams of flour with yeast
  • 30 grams of cornmeal (¼ cup)
  • 1 teaspoon ground cumin
  • 1½ teaspoons ground coriander
  • ½ teaspoon ground turmeric
  • 3 tablespoons coriander seeds, toasted and lightly crushed
  • 225 grams of pumpkin violin peeled and grated
  • 300 grams of corn kernels
  • 3 spring onions cut into thin slices
  • 15 grams of coriander chopped
  • ½ red chili seeded finely chopped
  • 150 grams of padrón peppers
  • 250 milliliters of oil for frying
  • 1½ teaspoons of salt
  • ½ teaspoon ground black pepper

How to make Fried Salty Fritters:

Place the first eight ingredients, including the coriander seeds, in a large bowl, along with a teaspoon of salt and a generous pinch of ground black pepper. Blend until a lump-free paste is obtained.

To grind this you can use any food processor or grinder such as a blender or Thermo mix if you have one at home. We add the rest of the ingredients except the peppers, that is, the pumpkin, the corn, the spring onions, the coriander and the chili. Mix well to form the dough for our vegetable fritters. When we have the dough ready we must heat enough oil in a medium skillet over high heat. When we check that it is very hot, add three tablespoons of the paste to the oil and fry for 2 minutes.

Place a pepper exerting light pressure on the fritter and continue frying for a few more minutes. We turn it over and leave it on the fire for another three minutes until it browns.

Place on a plate lined with kitchen paper and keep warm while continuing with the rest of the dough. Serve the fried salty fritters hot and enjoy. This type of salty fritters is very easy to make and, as you will see, the mixture of spices gives it a very exotic and special flavor.
