Fried Potato Quesadillas Recipe

Recently there has been a great controversy about whether quesadillas are named a tortilla filled only with cheese or a quesadilla can also be named a tortilla that has cheese but combined with some other ingredient. The truth is, I believe that if it has cheese, it can be called a quesadilla, regardless of whether or not it has any other ingredient. In any case,  fried quesadillas are a super simple, versatile, economical and delicious dish, no one can deny that.

That is why this time we have decided to bring you an exquisite recipe for fried potato quesadillas. These are quesadillas filled with a delicious mashed potato and of course, they will have a little cheese to fulfill the name.

Ingredients to make Fried Potato Quesadillas:

  • 1 kilogram of corn dough
  • ½ kilogram of potato
  • 200 grams of string cheese
  • ½ piece of white onion
  • 1 clove garlic
  • ½ piece of lettuce
  • 1 sour cream tablet
  • 1 cup of grated cheese
  • 1 pinch of salt
  • 1 pinch of pepper

How to make Fried Potato Quesadillas:

The first step is to gather the ingredients that we will need to prepare these delicious fried potato quesadillas. We are going to start by cooking the potato, for this we place it in halves in a saucepan with enough boiling water, add a piece of onion, a pinch of salt and a clove of garlic, and let it cook until the potato is very soft; this takes approximately 25 minutes. Once the potato is ready, place it in a deep bowl and with the help of a blender,  crush the potato until it forms a puree, add the rest of the finely chopped onion, a pinch of salt, a pinch of pepper and that’s it.

Now with the corn dough, we form a tortilla of normal size and thickness, on it we place a little of our mashed potatoes accompanied by some strands of string cheese, we fold the tortilla to form our fried quesadilla and seal perfectly by pressing the edges. Once the potato quesadilla is ready, we take it to fry in a pan with very hot oil, let it brown very well on both sides, and once ready, remove it from the heat and place it on absorbent paper to remove excess oil. AND READY! We can serve the fried potato quesadillas accompanied with a little sour cream, grated cheese, lettuce and your favorite sauce.
