Fried Fish Recipe with chile de arbol (On disc)

Ingredients to make Fried Fish with chile de arbol (Disc):

  • Farm Mojarras (Weight approx. 500 grams each)
  • 2 Large Heads of Garlic
  • 1 Bag of Whole Black Pepper
  • 1 Bag of dried Chile de Arbol (Cambray) Approximately 100 grams
  • 2 liters of oil
  • 2 butter bars
  • salted
  • lemons
  • mayonnaise
  • pretzels
  • Red botanera sauce to taste

How to make Fried Fish with chile de arbol (On disc):

  1. The chile de arbol is toasted (Tatema) on the griddle until it starts to turn black and they are removed.
  2. Put in the blender, add the cloves of the 2 previously peeled heads of garlic and the Pepper, add a little water to grind and salt to taste, the mixture should be thick.
  3. Then the mojarras are covered (muddy) with this mixture and left to rest for 1 hour.
  4. The disc is heated on the fire. If it is with firewood in the spit, better.
  5. Since it is hot, the 2 liters are emptied. of oil and add the 2 bars of butter.
  6. Then the mojarras are poured. One or two depending on the size of the disc, since they are well fried, they are removed from the oil and that’s it.

  8. Put the mojarra on a large plate, add lemon, add a layer of mayonnaise and a bit of botanera sauce, if you like it, it can be accompanied with French fries and vegetable salad, and crackers.
