Fried Enchiladas Recipe

Ingredients to make Fried Enchiladas:

  • 12 tortillas
  • 1/2 kg. fresh cheese, crumbled
  • 1/2 cup cooked and ground beans
  • 2 cups of green tomato sauce
  • 250 gr. beef, cooked and shredded
  • 4 Serrano peppers
  • 1/2 onion
  • 1 clove garlic
  • 1 sprig of coriander
  • Oil

How to make Fried Enchiladas:

Strain the beans taking care that they are not too thick. They must be hot. Cook the tomatoes together with the chilies, and grind them with the onion, garlic and cilantro. It is seasoned with salt. Pass the tortillas through the bean broth, and fry them in hot oil, avoiding browning. They are stuffed with meat and covered with cheese and sauce. They are served immediately, piping hot.
