Fried Chickpeas with Spinach Recipe

Until now, whenever I have eaten chickpeas with spinach it has been in a stew but this time I have decided to make them fried and I am very happy with the result because they are very tasty and very juicy. You cannot miss this recipe for fried chickpeas with spinach!

Ingredients to make Fried Chickpeas with Spinach:

  • 1 can of cooked Chickpeas (400 grams)
  • 250 grams of Spinach
  • 1 medium onion
  • 1 splash of extra virgin olive oil
  • 1 splash of white wine
  • 1 pinch of salt
  • 1 pinch of ground black pepper
  • 1 pinch of minced Garlic
  • 100 milliliters of water

How to make Fried Chickpeas with Spinach:

1 We start by cleaning the spinach and washing it to remove any remaining dirt. We put a pan with water on the fire and when it starts to boil we add the spinach. We keep them until the bright green changes to a darker green. We drain them and reserve.

Trick: We can also use frozen spinach to make these stewed chickpeas and save this step. Instead we must put them to defrost several hours in advance.

2 Peel the onion and cut it into small dice (brunoised). In a wide frying pan, put a splash of oil and when it is hot, add the onion to poach it.

3 Wash the chickpeas very well to remove the remains of the canning liquid and drain them.

4 When the onion begins to be transparent, add the boiled spinach, stir well and sauté for approximately five minutes.

5 Add the drained chickpeas, a splash of white wine, salt, pepper and ground garlic and sauté. When the wine is almost evaporated, add half a glass of water (or a little more if necessary) and cook the canned chickpeas with spinach until the liquid has completely reduced. This way we make sure that the vegetables are very soft.

6 We serve the fried chickpeas with spinach warm and enjoy!
