Fried Chickpeas with Scrambled Egg Recipe

Eating legumes does not have to be boring or necessarily involve spoon dishes. Share this time one of my favorite recipes with chickpeas, with an irresistible spicy touch! You will not believe that simple fried chickpeas with scrambled eggs can be so delicious. If you like spicy, this is your recipe!

Ingredients to make Fried Chickpeas with Scrambled Eggs:

  • 1 can of cooked Chickpeas (400 grams)
  • 2 medium onions
  • 2 Cayenne’s
  • 2 Eggs
  • 1 splash of extra virgin olive oil
  • 1 pinch of salt
  • 1 splash of Worcestershire Sauce (also called perils sauce)
  • 1 pinch of ground pepper
  • 1 glass of water

How to make Fried Chickpeas with Scrambled Eggs:

  1. To prepare these fried chickpeas with scrambled eggs, wash the vegetables well to remove any remaining liquid that preserves them and let them drain.
  2. Meanwhile, peel the onions and cut them into strips. We put them in a frying pan together with the two cayenne peppers and a splash of virgin olive oil and put it on the fire to poach it.
  3. When the onion is slightly transparent, add the chickpeas and the glass of water. Cover and let cook (this way we will ensure that the fried chickpeas with onion are very tender)
  4. When the water has almost completely reduced, add the salt, the ground pepper and the Worcestershire sauce. Stir well and keep the chickpeas sautéed on the fire.
  5. Tip: The amount of sauce and pepper will depend on you and your tolerance for heat.
  6. Just before serving, lightly beat the eggs as if we were going to prepare a homemade tortilla and add them to the pan.
  7. We remove to mix well, wait for them to set and serve the fried chickpeas with scrambled egg immediately, do not forget to remove the cayenne peppers so that no one eats them by accident!
