Fried Chickpeas with Potatoes and Eggs Recipe

Ingredients to make Fried Chickpeas with Potatoes and Eggs:

  • 400 g of chickpeas
  • 2 small potatoes
  • 1 onion
  • 4 eggs
  • Oil
  • Salt
  • Chopped parsley

How to make Fried Chickpeas with Potatoes and Eggs:

  1. Cook the chickpeas that we have had to soak since the day before in salted water until they soften.
  2. Peel and chop the potatoes into thin slices.
  3. Chop the onion and brown it in oil. When it is golden, add the potatoes, add salt and fry for 15 minutes.
  4. When the potatoes are done, remove them to a plate and in the same pan fry the chickpeas for 4-5 minutes.
  5. On a large plate, place the chickpeas and the fries on top.
  6. At the last moment, fry the eggs, place them on top of the potatoes and sprinkle with parsley.
