Fried Chickpeas with Onion and Tomato Recipe

Legumes are one of the most characteristic foods of the Mediterranean diet and are very beneficial for our body. However, they are not very popular with children (and also with some adults) and sometimes in summer we leave them relegated to the kitchen cupboards because we do not know very well how to prepare them to enjoy them even when it is hot.

This time I propose you a dish of fried chickpeas with onion and dried tomato that is a hit in my house, that can be prepared in a very short time and that is delicious whether it is summer or winter. Even if you don’t like chickpeas with tomato, I’m sure you’ll like this dish, give it at least one chance!

Ingredients to make Fried Chickpeas with Onions and Tomatoes:

  • 1 can of cooked Chickpeas (400 grams)
  • 50 grams of dried tomatoes in oil
  • 2 medium onions
  • 1 glass of white wine
  • 1 glass of water
  • 1 cube of concentrated vegetable or meat broth
  • 2 tablespoons of oil
  • 1 pinch of salt
  • 1 pinch of ground black pepper

How to make Fried Chickpeas with Onion and Tomato:

  1. We will begin to prepare these fried chickpeas with onion and tomato by opening the pot of chickpeas, pour them into a colander and wash them well under running water to remove the remains of the liquid that preserves them. We let drain.
  2. Peel the onions and cut them into julienne finely. Then we put a couple of tablespoons of oil in a frying pan and when it is hot, we begin to poach the cut onion.
  3. Trick: We can take advantage of the oil from the dried tomatoes, it will add more flavor to our dish.
  4. 3 When the onion begins to soften, add the crumbled bouillon cube, the wine, the water, the ground pepper to our liking, the drained chickpeas and the dried tomatoes (whole or cut into smaller pieces, to our liking).
  5. Stir to mix well all the ingredients of the fried chickpeas, cover the pan and let it all cook together until the broth has reduced.
  6. Trick: If we don’t have dried tomatoes in oil we can use fresh tomatoes.
  7. Once reduced and before removing from the heat, try the fried chickpeas with onion and dried tomato and, if necessary, adjust the salt.
