Ingredients to make fried cheese empanadas:
• 24 discs of empanadas for copetin
• 2 white green onions finely chopped
• 300g coarsely grated mozzarella cheese
• 1 beaten egg
• Salt to taste
• 1 tbsp. butter
• Oil or fat for frying
How to make fried cheese dumplings:
Sauté the green onion in a skillet with the butter over low heat, covered, for 15 to 20 minutes until translucent, remove from heat and let cool. In a bowl place the cheese, onion and egg with a pinch of salt.
Place a teaspoon of the filling in the middle of each disk, moisten the edge with water and close by pressing with the tines of a fork. Fry them in hot oil or fat.
