These delicious cakes originate from Germany, but they arrived in Chile in the mid-19th century, introduced by immigrants of that time, who called them “berliner”, and they were prepared for the Carnival and New Year’s Eve festivities. Ingredients to make Fried Berliners:
- 150 grams of flour
- 5 grams of yeast
- 2 units of egg yolks
- 15 grams of sugar
- 20 grams of butter
- 60 milliliters of water (¼ cup)
- 1 liter of oil
- 20 grams of powdered sugar or icing sugar (to decorate)
- 50 grams of delicacy (Arequipa) or pastry cream (to fill)
How to make Fried Berliners:
- In a bowl, mix the flour, sugar and yeast.
- Add the egg yolks, butter and water, preferably hot or at room temperature.
- Knead until everything isfully integrated.
- Divide the dough into balls of between 60 and 80 gramseach and let it rest for approximately 30 minutes, in a warm place for the yeast to take effect.
- Pre-heat enough oil for 10 minutes and carefully dip a ball in it, wait for it to brown and turn so that it browns equally on both sides.
- Trick: Take care of the temperature of the oil, make sure that the flame is low so that they do not brown too quickly and these easy fried berlins cook well on the inside.
- Cut the fried berlins on one side and make room inside to fill with the Arequipa. Garnish with powdered sugar (icing sugar) and serve.
