Ingredients to make fresh roasted ham:
- 1 onion
- 1 glass of cognac
- 400 grams of raspberries
- 1 lemon, the skin
- 1 orange, the peel
- 400 grams of Corinthian raisins
- 5 kilos of fresh pork leg
- 1 pinch of rosemary
- 1 pinch of salt
- 1 sprig of thyme
- 8 ccs of Port wine
How to make Fresh Roasted Ham:
- Put the ham with its skin (or rind) in a baking dish well sprinkled with rosemary, thyme and salt.
- Put in the medium oven (200º Celsius) for approximately half an hour, turning it continuously.
- When this time has passed, see if it is cooked and if the necessary time is not left. A little before it is completely cooked, add the sliced onion, the orange and lemon skins and the Port wine on top plus the raisins (previously soaked in cognac).
- Let it cook in the oven for another 20 or 25 minutes and add the raspberries. Sliced ham is served accompanied by raisins and raspberries.
