Fresh Pot Recipe from Albacete

Ingredients to make Fresh Pot of Albacete:

  • For 4 people:
  • 200 g of white beans.
  • 350 g of backbone.
  • 350 g of pork tail.
  • 200 g of fresh bacon.
  • 200g of potatoes.
  • 100 g of turnip.
  • 200 g of cabbage.
  • 2 fresh blood sausages.
  • 200 grams of onion.
  • 1 head of garlic.

How to make Fresh Pot of Albacete:

  • We soak the beans the day before.
  • With the same soaking water we cook all the ingredients except the potato, the turnip and the cabbage.
  • The black pudding after about 20 minutes of cooking, we take it out and reserve.
  • When the stew is almost ready, add the chopped potatoes and turnips.
  • We make a rehash with garlic and paprika and add to the pot and chop the meats.
  • In a separate pan, cook the cabbage and reserve.
  • We present the beans, and on a tray the meats, accompanied by the cabbage.
