Ingredients to make Fresh Mango Salad:

• 1 ripe mango, diced

• 2 large tomatoes, diced

• 1 green bell pepper, diced

• 3 tablespoons olive oil

• 1 red onion, diced

• 2 tablespoons lemon juice

• Salt

• Pepper-to-taste

How to make Fresh Mango Salad:

In a large bowl, place the diced tomatoes, diced green chili, diced red onion, and diced mango. Mix well. In a small bowl, place the olive oil, lemon juice and season with salt and pepper to taste. Beat with a wire whisk to emulsify the dressing. Add to salad and mix well. Serve.
