Ingredients to make French Peas:

  • 1 kilogram of peas (frozen or fresh)
  • 1 large or 2 small onions
  • 50 grams of butter
  • 1 tablespoon of wheat flour or cornstarch
  • 1 lettuce
  • 150 grams of ham or bacon
  • 1 splash of olive oil
  • 1 pinch of salt
  • 1 glass of broth or water
  • 1 pinch of black pepper

How to make French Peas:

Heat a frying pan or saucepan with the butter over medium heat. Finely chop the onion or into strips and add it to the pan to cook with the butter.

Chop the pieces of ham or bacon and, when the onion is golden, add them and sauté everything for a couple of minutes.

Add the peas, either fresh or frozen, and mix. Add the tablespoon of flour or cornstarch and mix again so that it is well integrated into the preparation.

Tip: the flour will help thicken the sauce a bit and make the French peas creamier.

Pour the glass of broth or water. You can use homemade chicken or vegetable broth, as well as dissolve a chicken or vegetable stock cube in water. Let the preparation cook until the peas are tender. Add a little pepper and taste to see if you need to add a little salt, since ham and bacon are ingredients that leave a salty taste.

While the peas are cooking, wash a head of lettuce. It can be any lettuce, but curly is best in this French Peas recipe. Cut the lettuce into thin strips and, before the peas are finished cooking, add them.

The amount of lettuce will be to taste, since once it is cooked it decreases a lot. Let it all cook together. If you see that more liquid is needed, add more water or broth, but we emphasize that the recipe is very good with little sauce and thick.

When you see that the sauce is thick and the peas are cooked, turn off the heat. Let sit for about 10 minutes for all the flavors to settle.
