- 1 tablespoon of butter
- 1 liter of chicken or vegetable broth
- 2 glasses of water
- 1 piece of Emmental cheese
- 100 milliliters of white wine
- 1 pinch of salt
- 1 splash of olive oil
- 1 pinch of pepper
- Bread
How to make French Onion Soup Gratin:
- Gather all the ingredients on the kitchen counter. Keep in mind that to make this delicious French onion soup you can use a loaf of bread from the day before and chicken broth or vegetable broth if you prefer to make a vegetarian recipe.
- As for the cheese, you can also use Gruyere cheese or any other cheese with similar characteristics, and if you don’t get shallots don’t worry, then add one more onion and that’s it.
- Then start by cutting the onions, to do this remove all the skin and cut them into slightly thick feathers. If you have obtained shallots to make this onion soup, also cut them in the same way.
- To make the onion sauce, first melt the butter a little and add a splash of oil. This will help us to ensure that the butter does not burn and that the base of the gratin onion soup has a great flavor.
- When the butter has melted, add the onions together with the shallots and cook over low heat with the pan covered for about 30 minutes, stirring from time to time.
- When you see that the onion is poached, slightly golden and caramelized, remove the lid and add the white wine to the pot. Stir constantly until the alcohol evaporates.
- Next, add the broth along with the water, stir and continue cooking the French onion soup over low heat for an hour. Also take advantage and place the thyme branch in the pot so that it gives off its scent.
- While the soup is cooking, we’ll work on the bread. Then, cut the bread into slices and put them to toast. Once they are browned on both sides, rub the surface of each toast with the garlic clove cut in half.
- After one hour of cooking, check how the French onion soup is going. Remove the sprig of thyme and correct the seasoning by adding salt and pepper to taste.
- To finish, serve the onion soup in individual clay or ceramic pots, placing one or two slices of bread on top. Finally, place a layer of grated cheese and take it to the oven to gratin for about 5-10 minutes until you see that a layer of crispy cheese has formed.
