Ingredients to make Ravioli four cheeses:
- 1/2 cup of grated quarry cheese
- 1 cup of milk
- 1/2 cup grated Gruyere cheese
- 1/3 cup grated Parmesan cheese
- 1 tablespoon Roquefort cheese
- 1 cup double cream
- 2 tablespoons butter
- 2 tablespoons of flour
- a pinch of pepper
- 200 ravioli
How to make Four Cheese Ravioli:
- Melt the butter in a pot
- Remove it from the heat and add the flour and milk, stirring continuously so as not to form lumps.
- Bring it to the heat and add the Gruyere, Parmesan, Cuartirolo and Roquefort cheeses, the double cream and a pinch of pepper.
- Heat and stir continuously without letting it boil.
- Serve over cooked and drained ravioli.
