• 55 grams of dehydrated potato flakes

• 1½ liters of milk

• 1 teaspoon Bovril

• 100 grams of duck or goose foie gras

• 100 milliliters of liquid cream

• 1 can of Truffles (optional)

• Salt

• Ground white pepper

• Ground nutmeg

How to make foie cream with Thermo mix:

The first step to make this foie cream with Thermo mix is to put all the ingredients of the recipe in the Thermomix glass except the truffle, that is, the potato flakes, the Bovril teaspoon, the foie gras, the salt and the spices to taste, but with a very small amount of milk, about 300 milliliters nothing more, so that when it is cooked it does not come out. Then we program the Thermomix at 100º C temperature at speed 1 until steam comes out of the beaker.

When the steam comes out of the Thermomix, add the rest of the milk and reheat to 80 or 90º C so that it does not cook and prevent it from coming out. You can vary the consistency and texture of the foie gras cream recipe according to your taste, adding more or less liquid. But eliminating the cream and making it only with milk, it doesn’t come out as creamy.
