- 2½ cups of wheat flour (350 grams)
- 1 teaspoon of sugar
- 11 grams of dry yeast powder or fresh
- 250 milliliters of lukewarm water
- 2 teaspoons of salt

- Place the yeast, sugar and warm waterin a container, stir until a homogeneous mixture is obtained and let it rest in a warm place or at room temperature.
- You will have to wait for the liquid to generate a bubbly surface to add the salt and mix again.
- Tip:To make your pizza dough sponge you can use dry yeast or fresh yeast, the amount is the same and in both cases it is activated with warm water.
- Mix the flour with the butterusing your fingertips; it will have a sandy texture.
- Then, on a flat surface dusted with flour, form a volcano with this mixture, add the fermented yeast in the center and knead until you get slightly elastic dough.
