Flourless Chocolate and Walnut Cake Recipe

For the most chocolate lovers, this time I come to this article with an easy and quick recipe of the rich, rich ones. And it is that this chocolate and walnut cake without wheat flour melts in the mouth. With a lot of chocolate flavor and a crunchy touch from the nuts, which also soften it a bit, this chocolate oatmeal cake is ideal as a dessert or with coffee. Soft, creamy, to eat with a spoon and savor little by little. Seriously, it’s a blast. You can also try this spongy chocolate and walnut cake with another dry fruit. I was craving nuts, but with almonds or hazelnuts it must also be luxurious. You are going to scrape the mold for sure!:)

Ingredients to make Flourless Chocolate and Walnut Cake:

  1. 120 grams of dark chocolate for desserts (mine without sugar)
  2. 90 grams of butter
  3. 1 heaping tablespoon unsweetened pure cocoa powder
  4. 85 grams of sugar (I equivalent sweetener in equal quantity)
  5. 10 grams of natural yogurt (I put it skimmed) (optional)
  6. 20 grams of flour (I put it in oatmeal)
  7. 60 grams of peeled walnuts
  8. ½ dessert spoon of vanilla essence
  9. ¼ dessert spoon of salt
  10. 1 pinch of cinnamon

How to make Flourless Chocolate Pecan Cake:

  • In a bowl, melt the butter and add the chocolate in pieces and the cocoa. Mix until homogeneous.
  • Separate the yolks and whites of the 3 eggs. In the bowl with the yolks, add the sugar, vanilla, salt and cinnamon, and beat until a smooth and homogeneous mixture is obtained.
  • On the other hand, we mount the whites until stiff.
  • Add the chocolate mixture and the yogurt to the bowl of the yolks, and beat.
  • Next, we add the sifted flour and the nuts, which we will have previously ground with a kitchen robot. We mix.
  • Finally, we add the whites carefully, with enveloping movements so as not to lose the air inside.
  • Pour the mixture into a greased mold and bake the chocolate and walnut cake in the already hot oven at 180ºC for about 20 minutes to obtain a moist consistency, which is what I did. If we want something drier, we leave it for 5 or 10 more minutes.
  • Finally, after removing the flourless chocolate and walnut cake from the oven and when it is completely cold, before serving, sprinkle sugar (or icing sweetener) on top. You’ll see what a rich thing!
