Flamenco eggs are a traditional Andalusia dish. This dish, well known in Seville, is typical in many bars and restaurants. Although it is a recipe that varies according to the area where it is prepared, it can never miss the egg, chorizo and ham.
This recipe that we propose is very simple and is made with few ingredients. We can say that it is the simplest version of this dish, but you can also add onion and garlic to the sauce, as well as vegetables such as red pepper and green beans.
Ingredients to make Flamenco Eggs:
- 2 units of eggs
- 100 grams of peas
- 100 grams of fried tomato
- 50 grams of sausage
- 80 grams of ham
- 1 splash of olive oil
How to make Flamenco Eggs:
- Heat a saucepan with water and, when it starts to boil, add the peas. Leave them until they are tender. Peas can be canned, fresh or frozen.
- Cut the chorizo and ham into small cubes. Put a frying pan with very little oil; add the chorizo and ham and sauté over medium heat.
- When the peas are cooked, drain them well.
- Once you have sautéed the chorizo and the ham, add the peas, let them cook for a few minutes so that they take on the flavors.
- Add the fried tomato and leave again for a few minutes. When all the flavors have blended, turn off.
- Take the clay pots and distribute the sauce among them.
- Put the pans on the baking tray. Add a tablespoon of fried tomato in the middle of each pot.
- It is optional, but when you put it in the oven it will dry out more, so with a little more tomato it will be juicier.
- Add an egg to each pan. Break them into a separate bowl to make sure they are good and then add them to the pots.
- Put the plate in the oven at 180ºC and leave it until the eggs are cooked. The cooking point of the eggs will be as you like, well done or little.
- It is best to turn off the oven when the egg white begins to turn white. Your flamenco eggs will be ready to eat!
