Ingredients to make LINEN AND BARLEY SOUP:
- 1 liter vegetable broth
- 2 tablespoons flaxseeds
- 40g barley flour
- 20g butter
- 1/2 natural yogurt and the same amount of liquid cream
- 1 teaspoon cumin powder
- 1 teaspoon aromatic herbs:
- peppermint
- marjoram
- basil
- 1 egg yolk
- a pinch of salt
How to make FLAX AND BARLEY SOUP:
- Prepare a short vegetable broth with carrot, turnip, leek and broccoli with a liter and a half of cold water and salt; cut the vegetables into thick pieces and cook for an hour over medium heat.
- Strain the broth and reserve it for the recipe.
- The vegetables can be used as a garnish for another recipe.
- Step 2 Lightly toast the flax grains and cumin in a pan; put it in a saucepan together with the barley flour and the butter and stir it with a spoon, until it is well mixed, over low heat.
- Add the cold broth little by little until it is finished and boil the soup for 20 minutes.
- Step 3 After this time, add the aromatic herbs and give them a new boil, removing it from the heat.
- Mix the cream, yogurt and yolk in a separate bowl until you achieve a homogeneous cream; add it to the bottom of the tureen and pour the very hot broth over it; give it a turn with a spoon, and serve it immediately, garnished with some fresh herbs.
