Ingredients to make flamed caramel crepes:

For the sweet crepes:

  1. 1 cup of whole milk
  2. 1 cup of wheat flour (140 grams)
  3. 2 tablespoons of vanilla essence
  4. 2 tablespoons of refined sugar
  5. ¼ cup Butter (56¼ grams)
  6. 1 piece of Egg

For the sauce:

  1. 1½ cups of Caramel
  2. ½ cup of Butter (112½ grams)
  3. ¼ cup orange liqueur
  4. ¼ cup of rum
  5. ¼ cup whole milk

At your service:

  1. 10 pieces of chopped walnut
  2. ¼ cup strawberry jam
  3. ½ liter of vanilla ice cream

How to make flamed caramel crepes:

  • Below we present the ingredients that we will use to make the sweet crepes.
  • To start preparing the crepe dough, add a cup of milk, sugar, vanilla essence, egg and 2 tablespoons of melted butter to a deep container. Beat until the ingredients are incorporated.
  • Add the previously sifted flour and beat again until a homogeneous mixture is obtained.
  • Heat a large frying pan and add the amount of butter needed to cover the bottom. In this way, we will ensure that the sweet crepes do not stick together.
  • Pour enough mixture to cover the base of the pan with a thin layer and stir until the entire surface is filled.
  • Once the lower part of the crepe is cooked, peel off the edges and carefully flip to finish cooking the upper part.
  • When the sweet crepe is ready, fold it into four parts to form a triangle and reserve on a plate. We repeat this same process until the dough is finished. If you don’t want to fold it, you don’t have to, it’s completely optional.
  • To prepare the sauce that will cover the crepe, melt the butter in a medium skillet and add the cajeta. In many countries, the cajeta is known as dulce de leche or delicacy.

Trick: If the sauce is too thick you can add a little whole milk.

  • Cook for a few minutes so that the flavors are incorporated, stirring constantly with a wooden spoon. When the sauce begins to boil, we add the crepes to completely impregnate them, moving them from one side to the other.
  • When the sauce begins to be consumed, we add a little rum and orange liqueur to the preparation.
  • We move the pan and when it begins to present a violent bubble we tilt it towards the fire to flame the sweet crepes. When the fire is extinguished, they will be ready to serve.

Trick: In this step you must be very careful, since the flame can be violent.

  • Ready! Serve the flamed cajeta crepes on a plate accompanied with a little vanilla ice cream. Spread the chopped walnut over each of them and enjoy this exquisite dessert.

Tip: You can add a touch of jam to give color to your presentation.
