Ingredients to make Fitness Carrot Arepas:

  • 1 cup of corn flour (120 grams)
  • ½ teaspoon of salt
  • ½ cup Cilantro or chives
  • ½ cup of warm water
  • 2 Eggs (optional)

How to make Fitness Carrot Arepas:

Before starting to make these healthy arepas, we must organize the work space. Have all the ingredients in the exact amounts. Wash, chop and grate the carrot, as well as the cilantro or chives.

Trick: Grate the carrot very finely, so the arepas will have a nice texture when you bite into them. Everything also depends on the taste of each person.

To start preparing the dough, place all the ingredients in a bowl. To make this variation you will need very little flour, unlike the classic corn arepas. Next, knead all these ingredients  with your hands until they are integrated as well as possible.

At this point you can add two eggs if you wish, if you do the dough will be a little more consistent. You can also add oatmeal. To finish our carrot dough for arepas, pour half a cup of warm water into the mixture. Do it little by little and knead until you achieve a soft but consistent dough.

Then, make several balls with the dough a little smaller than your fist, although that will also depend on the size you want to make the fitness arepas. When you have the balls, flatten each of the balls with the palms of your hands and try to create a disk with the dough, with a thickness to taste.

Heat a frying pan, preferably non-stick, and cook the arepas for 5 minutes on each side until you see that they are slightly golden. What a rich and light breakfast! You can even repeat and eat more than one of these delicious fitness carrot arepas without fear of affecting your figure.
