Ingredients to make Fish with mushrooms:
- 6 fish fillets
- 1/2 cup wheat flour
- 100 grams of unsalted butter
- 2 large onions
- 4 garlic cloves, crushed
- 1 sprig of parsley, finely chopped
- 1 celery stalk, finely chopped
- 1 sprig of rosemary
- 1/4 kilo of mushrooms, washed, dried and cut into slices
- 2 cups of fish broth
- 1/2 cup of milk cream
- salted
- Pepper
How to make Fish with mushrooms:
- In a plate combine 1/4 cup of the flour, season with salt and pepper to taste. Flour the fish fillets. Heat half the butter in a skillet and fry the fish until lightly browned on both sides. Remove and save.
- Thinly slice one of the onions, separate the rings and brown them in the remaining butter (don’t forget to add a teaspoon of oil so it doesn’t burn). Remove and save.
- The other onion chops finely. Sauté until transparent. Add the garlic, rosemary, parsley, Spanish celery and mushrooms and fry everything for 5 minutes. Add 1 cup of fish broth and simmer until the liquid has reduced by half.
- Brown the remaining tablespoon of flour and dissolve it in the remaining cup of broth. Add to the previous preparation and, stirring, cook until thickened. Add the heavy cream and stir well. Save.
- In a greased baking dish, place alternate layers of fish and sauce. Take it to the preheated oven at 300º until it is bubbly and slightly golden on top.
