Fish stew recipe

Ingredients to make Fish Sancho:

  • 3 oil tablespoons
  • 3 avocados
  • 4 garlic cloves
  • 2 big-headed onions
  • 1 sprig of coriander
  • 1 pinch of coloring
  • 8 long onion wedges
  • 3 young corn cobs
  • 500 grams of habanera potatoes
  • 3 chicken broth cubes
  • 5 peeled green plantains
  • 1 pinch of salt
  • 6 slices of river fish
  • 6 ripe tomatoes
  • 500 grams of cassava

How to make fish sancocho:

  1. Peel and finely chop the tomatoes and the two kinds of onion, fry them in oil with crushed garlic, color and salt.
  2. Heat 8 cups of water with the broth, the chopped cilantro, half of the previous preparation and the green plantain cut into pieces.
  3. Cook for 10 minutes.
  4. Add the chopped cassava, the ears of corn split in half, and the peeled potatoes, wait for the cassava to soften.
  5. Add the fish and keep with the pot covered for 15 minutes.
  6. Serve very hot adding the rest of the stew and pieces of avocado.
