Ingredients to make Fish Sancho:
- 3 oil tablespoons
- 3 avocados
- 4 garlic cloves
- 2 big-headed onions
- 1 sprig of coriander
- 1 pinch of coloring
- 8 long onion wedges
- 3 young corn cobs
- 500 grams of habanera potatoes
- 3 chicken broth cubes
- 5 peeled green plantains
- 1 pinch of salt
- 6 slices of river fish
- 6 ripe tomatoes
- 500 grams of cassava
How to make fish sancocho:
- Peel and finely chop the tomatoes and the two kinds of onion, fry them in oil with crushed garlic, color and salt.
- Heat 8 cups of water with the broth, the chopped cilantro, half of the previous preparation and the green plantain cut into pieces.
- Cook for 10 minutes.
- Add the chopped cassava, the ears of corn split in half, and the peeled potatoes, wait for the cassava to soften.
- Add the fish and keep with the pot covered for 15 minutes.
- Serve very hot adding the rest of the stew and pieces of avocado.
