Ingredients to make fish stew:
- 1 kilogram of fish you want
- 1 sprig of parsley or cilantro
- 1 unit of Lemon (juice)
- 1 unit of large onion
- 100 milliliters of white wine
- 3 tablespoons of olive oil
- 1 pinch of salt
- 1 pinch of whole cayenne pepper (optional)
- 2 teaspoons of flour
How to make fish stew:
- Brown the finely chopped onion in a little hot oil. Add the clean and chopped fish seasoned with salt and lemon juice.
- Then add the parsley and pepper. Let it cook over low heat for 5 minutes. Add the white wine and finish cooking until it is cooked. Fish is reserved.
- The flour browns in the rest of the oil. Once golden, it is added to the fumet and passed through the sieve. Bring this sauce to a boil, stirring so that it does not stick.
- It is added back to the fish and served with lemon wedges. It can be accompanied with boiled potatoes or grained rice.
