Fish recipe with cilantro mojo sauce

Ingredients to make Fish with cilantro sauce:

  • For the fish:
  • 2 fish fillets
  • 1 onion (medium)
  • 100 milliliters of extra virgin olive oil
  • 1 pinch of salt
  • For the cilantro mojo sauce:
  • 10 garlic cloves
  • 1 bunch of coriander
  • 1 teaspoon cumin (preferably whole grain)
  • 2 tablespoons of vinegar
  • 15 tablespoons of olive oil
  • 1 teaspoon of salt (preferably coarse)

How to make Fish with cilantro mojo sauce:

  1. Place the cleaned fish fillets in a bowl and add salt.
  2. Crush the garlic clove together with the vinegar, cumin and salt. Add the coriander and continue blending until you get a paste.
  3. Trick: You can crush the ingredients in the mortar, blender or processor. You choose.
  4. Slowly add the 200 ml of oil while continuing to mash and stir the coriander mojo. Correct the salt.
  5. Cut the onion into small cubes. Prepare the pan with plenty of olive oil and wait until it is hot. Keep the heat low. Fry the onion and stir from time to time. Wait until the onion softens and takes on color. At that moment, raise the heat to medium so that it browns completely and stir, to avoid burning. Use a slotted spoon to remove the fried onion and place it on a plate covered with absorbent paper.
  6. Remove most of the oil from the pan, keeping the equivalent of one or two tablespoons, put on medium-high heat and fry the fish, over and over.
  7. To serve the fish with coriander mojo, cover it with a row of mojo sauce and sprinkle fried onion on top. Hmm! The flavor of the coriander sauce sweetened with the onion is quite a taste experience. You can accompany this dish with a green salad or roasted potatoes.
  8. Tip: Serve immediately.
