Fish quesadillas are a good way to whet your appetite when it comes to seafood. Give yourself the opportunity to try these Mexican quesadillas as an appetizer or to accompany a fresh shrimp ceviche. Follow the easy recipe that we show you and surprise everyone at home.

Ingredients to make Fish Quesadillas:

  • 6 fish fillets
  • 500 grams of tomato
  • 250 grams of onion
  • 1 bunch of Parsley
  • 1 teaspoon Cumin
  • 1 tablespoon of oregano
  • 3 bay leaves
  • 4 cloves of garlic
  • 1 tablespoon of salt
  • 1 liter of oil
  • 500 grams of Tortillas
  • 1 bottle of hot sauce
  • 250 grams of Lemons

How to make Fish Quesadillas:

1 We gather all our ingredients. Remember to wash your hands very well before preparing these tasty fish quesadillas.

2 To make the fish quesadillas, we boil the fish with enough water until it covers it. Add a piece of onion, 2 cloves of garlic and some bay leaves. Let it boil for approximately 5 minutes. Then remove from the heat, strain and let the fish cool.

3 Meanwhile, finely chop the vegetables, tomato, onion, garlic and parsley, all separately. We also shred the fish once it has cooled. This way we will have everything ready for our Mexican quesadillas.

4 In a pan we are going to cook following this order. Add a splash of oil and sauté the onion and garlic until they change color, then the tomato and wait for them to cook a little for 3 to 5 minutes. Add the fish, mix to integrate very well. Then the parsley, cumin and oregano. We lower the flame, let it continue cooking another 5 minutes. Season with salt, turn off the heat and leave covered for the filling to rest.

5 Separately, put a frying pan over high heat and add enough oil. The oil must be very hot to begin frying the quesadillas. While the oil is heating, take a tortilla and place a spoonful of the fish in the center of it. We can help ourselves with a toothpick to hold the tortilla and prevent it from opening during cooking.

6 We serve the freshly made fish quesadillas and accompany with some lemon wedges and a spicy sauce such as the seven chili sauce.
