Fish in peanut sauce recipe

Ingredients to make Fish in Peanut Sauce:

  • 2 kg of fish fillets
  • 6 tomatoes
  • 200 gr of chestnuts or almonds
  • 6 medium onions
  • 1 kg of fresh shrimp
  • 250 gr of rice flour
  • 1 kg of dried shrimp
  • 300 gr of roasted peanuts
  • 4 garlic cloves
  • 1 L of coconut milk
  • 1 cup of oil
  • ginger

How to make Fish in Peanut Sauce:

  1. In a pot put half the oil and fry a chopped onion, a chopped garlic clove and three peeled and chopped tomatoes. When it is cooked add the chopped fish, a little water and oil, cook over low heat.
  2. In another pot add the rest of the oil and fry a chopped onion, a ground garlic clove and the rest of the peeled and chopped tomatoes
  3. When the tomatoes lose a little water, add the shrimp, make a broth and reserve.
  4. While blending the remaining onions and garlic, the peanuts, the chestnuts and the peeled and headless dried shrimp.
  5. Put the resulting paste in a pot with a little oil and coconut milk.
  6. When it starts to boil, add the shrimp broth, stirring constantly, add the rice flour, continue cooking until it thickens, then season with ginger.
  7. Add the preparation made with the fish and the one made with the shrimp.
  8. Stir well and serve in a bowl.
